What’s for lunch? A yummy protein packed salad and an apple! Only 285 calories!

Today’s lunch is a yummy salad topped with cherry tomatoes and black eyed peas. No dressing is needed because the sauce from the peas provides plenty of flavor. Add an apple to cleanse the palate.

Recipe:
2 cups raw spinach salad greens
2 tablespoons canned black eyed peas (drain the can first)
1/2 cup cherry tomatoes
